Matador Meat & Wine is a full service, custom cut butcher shop and wine store serving Frisco, Plano and Dallas.

Founded by Matt and Colleen Peterson, Matador Meat & Wine operates under the premise of offering only the highest quality CAB (Certified Angus Beef) and Prime grade beef. If you are only accustomed to shopping for your steaks at local grocery stores then you are in for a real treat when you grill or roast beef from Matador. Beef at local grocery stores are usually graded as “select” or “choice”. Although these sound great, CAB and prime are worlds greater than select and choice.

In addition to offering only the best beef, we custom cut it when you order it. When getting your steak custom cut, you get the thickness and the amount of fat trim that you want, not what the meat cutter thinks you want. Whether you like your steaks ¾” thick or two inches thick, we’ll cut it and you will get exactly what you want.

Matt was raised in Wichita, KS in a “meat and potatoes” family thus allowing for a fond appreciation of beef. A graduate of Baylor University, Matt worked in commercial property management in Kansas City prior to partnering in a pediatric home healthcare business here in Dallas. This business became a 4-time Inc. 500 award winner and 4-time Dallas 100 award winner prior to sale in August 2010.

Our resident Texas Tech Red Raider, Colleen was raised in a military family and lived all over the world but considers San Antonio home. After graduating with a degree in economics, Colleen entered the financial services market working for companies such as Fidelity Investments, CitiBank, and Charles Schwab. Colleen and Matt have 3 daughters; Brenna, Hayley, and Murphy.
